Just my opinion, based on alot of research I've read in the last few years, but it is a big mistake to cut out dietary sources of protein. The only alternative, then, is for people to replace the lack of dairy and meat sources with carbohydrates, (which usually means flour products (as that's easiest) but it has a drastic effect on increased insulun production, which leads to greater and greater fat storage, ie weight gain. It's a vicious cycle.
It is best to have a balanced diet of low glycemic vegetable carbohydrates, along with moderate amounts of lean protein and dairy products. There is alot of literature out there now, which describes such an approach. Personally, I would not recommend trying to eliminate meat and dairy from your diet, because it is extremely difficult to obtain sufficient amounts of balanced proteins without getting them from these products. (One has to eat an awful lot of beans/lentils/tofu etc. to even begin to supply what a small amount of lean meat such as a little chicken breast supplies). If you are interested, just do an internet search of "low carbohydrate" eating. There are many good sites out there that provide good tips.
The American Medical Association has finally had to address the critical situation we presently see with obesity dramatically on the rise, despite the recommendations of the Food Guide which says we should have up to 11 servings of carbohydrates per day. They have finally had to admit this approach is making Americans unwell, as more and more find themselves unhealthy because of being overweight.
I sympathize, because it isn't easy to keep fit when one is unable to exercise due to joint or mobility problems. The problem just compounds.
So Donna, my prayer is that you will find much good information that helps you to achieve your diet and fitness goals. Set your heart on your Helper, the Holy Spirit, who has been given to us to help us in all the affairs of our lives. He desires that you be completely healthy in body, soul, and spirit. He is faithful, and will help you if you ask Him.
