B.L.T. Pasta Salad
Ingredients 1-1lb. box penne or bow tie pasta, cooked, drained 1/2 lb. lean platter bacon, cooked, broken into 1/2" pcs. 1/2 head lettuce, cut bite-sized 2 nice cups cherry or grape tomatoes, cut in half (* I like grape tomatoes, they don't squirt you and fall apart in the salad! ) 4-6 oz. block sharp swiss cheese, cut in cubes or strips (however much you want to throw in) 1/2 of a small onion, chopped fine Hellman's or Kraft mayo 2 lemons salt and pepper to taste
Procedure Cook bacon, break up, set aside. Cook pasta till just done, drain, set aside to cool. In large bowl, toss all ingredients, coat all with mayo, squeeze in juice of lemons (can add the zest, too), add salt and pepper to taste, stir til mixed. Very simple and very good! Would be good for Memorial Day, 4th of July, picnics/reunions, Labor Day, you name it! (The cheese doesn't have to be swiss, toss in what you like! )
