Enchilada Casserole


Ingredients

1 1/2 lb ground beef
1 cup onion
2 cloves garlic
1 1/2 tsp ground cumin
4 tsp chili powder
1 1/2 tsp salt
1 1/2 tsp pepper
1 cup water
1 16oz bottle Picante Sauce ( i use meduim)
1 small bag(at least 20) corn tortillas
1 lb or more Monterrey Jack cheese shredded
2 cups sour cream
 
 
 
 
 
 
 

Procedure

Grease 9" x 13" pan and set aside. In skillet, brown beef, onions, garlic. Drain well, and add next five ingredients and simmer 10 minutes. Spread enough picante sauce on greased pan to cover bottom. Quarter tortillas and place on top of sauce until covered. Spread more sauce (enough just to cover area).Spoon on all of beef mixture. Spread sour cream on top, then 1/2 of cheese, layer of tortillas to cover, then cover with more sauce and rest of cheese ( as much as you like). Cover with foil and bake 40 minutes, then uncover and bake 5 more minutes. Temperature 375 degrees.5
