Sweet Southern Pineapple "Dressing"

Ingredients

2 sticks unsalted butter

3 1/2 cups sugar

1 Tbl. vanilla

      **

4 lg. eggs

1 cup milk

2 tall cans crushed pineapple in juice, WELL DRAINED

22 slices white bread, decrusted, torn into 1" pcs.

1 cup "craisins" (Ocean Spray dried cranberries) (you'll find them by the raisins)

1/2 cup chopped pecans

 

Procedure

In lg. mixing bowl, cream first 3 ingredients. Add and mix well the eggs, milk, and pineapple. Fold in craisins, pecans and bread. Pour into greased 13x9 baking dish or pan, (do not smooth flat, leave little "peaks), and bake at 350* for about 45 min. til peaks are tinged lightly brown and casserole is bubbly and carmelized. Serve warm with turkey, chicken, ham, etc. .....or have leftovers with vanilla ice cream!!!
