State Fair Corn Dog Casserole

Ingredients

2 cups chopped celery

4 Tbl. butter

1 1/2 cups sliced green onions

1 1/2 lbs. hot dogs, cut into quarters lengthwise, then into thirds crossways

2 lg. eggs

1 1/2 cups milk

2 tsp. dried sage

1/4 tsp. pepper

2 boxes Jiffy corn muffin mix

1-8oz. block sharp cheddar cheese, shredded

Procedure

In large frying pan, saute celery and hot dogs in butter til hot dogs are lightly browned. Stir in green onions and saute 1 min. longer. Set aside.

 

In lg. bowl, mix eggs, milk, sage, and pepper.Stir in hot dog mixture, 3/4 of the cheese, and corn muffin mixes.Pour into greased 13x9 baking dish or pan, sprinkle with rest of cheese, and bake at 400* , uncovered, for 30 minutes. Tastes just like you're at the fair!  (And kid friendly!)
