Citrus Baked Cod Fillets
Ingredients 1 lb. cod fillets, cut into serving size pieces if necessary 1 Tbl. minced fresh parsley 1/8 tsp. pepper 1/2 cup chopped sweet onion 1 garlic clove, minced 2 Tbl. butter or margarine 1/3 cup orange juice 1 Tbl. lemon juice 1 tsp. grated orange peel
Procedure Place fillets into a 11x7x2 sprayed baking dish, and sprinkle w/parsley and pepper. In small skillet, saute onion and garlic in butter til tender, then sprinkle over fish.Combine juices and peel and drizzle over fish. Bake, uncovered, in 375* oven for about 20 min. til fish is done. Fish can also be cooked in foil, sprayed, on grill. - This recipe is low in fat, sugar and salt
