Okay... I have put on a few unwanted stress pounds, so last Saturday I started replacing 2 meals a day with Slimfast shakes, snacking on fruit and nuts in between if I get hungry, and then eating a decent dinner... it's working pretty well.
 
I haven't starting exercising again yet, but am joining a gym soon... so for now I just need to jumpstart an "at-home" fitness plan.
 
Is this a healthy way to start? I just worry that once I start eating any kind of solid food again in the day, the pounds will come right back.

What you are doing is basically the "Slim Fast Diet" and while it works in the short-term you will see pounds come back when you take the shakes out of your daily meal plan.
 
I eat 6 meals a day. You should not go more than 2-3 hours without eating something. There is no reason for you to be hungry. Have a schedule and stick to it. Prepare your meals at home for the following day so you aren't rushed and tempted to go out and eat something bad.
 
A good meal plan for what you are trying to do and something that you can stick to for the rest of your life and not just as a "diet plan" follows:
 
I am basing these times on my day - adjust to your times of course.
 
7am - Egg white omelette w/salsa (see recipe), 2 pieces turkey bacon and I can't live without my coffee.
 
10am - 1 cup cereal (hooked on the Special K Vanilla/Almond currently) skim milk and a banana.
 
1pm - Salad - Spring mix lettuce, chicken breast, avacado, sunflower seeds, lite dressing. Apple or some other fruit. Sometimes I will have a sandwich w/mustard, lettuce only instead of my salad with a pickle on the side.
 
3pm - Protein shake
 
5pm - Yogurt and cottage cheese
 
Workout
 
8pm - Fish (or chicken or turkey), salad, one veggie. OR chili, soup or whatever I decided to make that night.

I know this sounds wierd, but I don't think I eat enough.
 
My chiropractor is also a nutrionist, and really gives me a lot of help. 
 
But, my typical food intake for a day:
 
Must eat breakfast, either a bagel, english muffin, cereal, or on occasion an egg sandwich.
 
lunch:  today it was a chicken salad sandwich from Arbys
 
I go to the gym from 4 til 5:30
 
then I'm not very hungry at night, but sometimes I make my self eat something, for example a bowl of cereal, or if my husband is awake ( he works 3rd shift ) and he's hungry, I might make a bit more for me.  He usually likes soup w/ grilled cheese, or meat of somesort.  All of our meat is what we harvest, deer, turkey, etc...
 
And I know I don't eat enough, and I don't eat enough of the right foods.
 
Her suggestion is basically the same as yours.   And she tells me all the time, I just have a hard time with it.  She is so disciplined.  And she only eats all natural foods, nothing with preservatives.

Not eating enough slows your metabolism. Since you work out not eating enough changes your results drastically. 90% of what your body looks like is is what you put in your mouth.

Yep, my metabolism is way too slow. I don't eat right, never have. At least I'm much more 'regular' about my first 2 meals of the day.
 
I have a bowl of instant oatmeal for breakfast every day. At work, I also have a little thing of orange juice (real oj, not from concentrate, lol).
 
At lunch I always have a sandwich on oat-nut bread (mmmmm, oats....hahaha, I'm such a horsie) - usually cheese, but every once in a while turkey or tuna or egg or peanut butter. And yes, mayonnaise. Can't do without that (well, except with PB).
 
Dinner is a crap shoot, lol. I might have noodles and a veggie, or some vegetarian beans, or a little 'personal' sized pizza, or scrambled eggs and toast, or a salad, or a frozen dinner (rarely though as I prefer home-made food), or frozen fish and chips, or a pan of hash browns....it just depends on what sounds good, since nothing usually sounds good.
 
Then the best part of dinner, ice cream.  I also usually have something else sweet in the evening, like a couple of cookies or a slice of loaf cake or part of a candy bar (or if I splurged at the bakery, maybe a chocolate-filled croissant or a pastry). I often wonder if I'd still do this without the benefits of pot, lol.
 
If I don't eat much for "dinner", I'll nibble on almonds or pretzels or popcorn while watching TV if I get hungry.
 
If I would just get back to exercising again. *sigh* I could stand to lose a few. I guess. (I don't think about it much, but I probably should)

I eat ice cream almost nightly. It makes me have to run an extra 30 minutes but it is worth it. Last night I ate two bowls. It's that time of the month. LOL

It's not the most healthy thing in the world just like Coke isn't but a cup or two a day won't hurt you! If you go to Starbucks just do the non-fat if you get one of those frou frou coffees. :)
