2 lbs. diced chicken-breast meat (you can used ground turkey if you prefer) 1 onion, diced and 1 green bell pepper diced 1/2 cup frozen corn kernels 4 (15 oz) cans kidney beans with liquid 2 (14.5 oz) cans low sodium diced tomatoes 1 (15 oz) can tomato sauce 2 cups water 2 tsp chili powder 1 tbsp dried parsley 1 tsp garlic powder 1/2 tsp ground cayenne pepper 1/2 tsp ground cumin
In a large pot cook chicken, onion and green bell pepper in about 2tbsp olive oil over medium-high heat. Cook until chicken is browned. Stir in remaining ingredients. Reduce heat, cover, and simmer 30 minutes.
