Generally, I just like them scrambled and with cheese and bacon.  But I'm trying to..broaden my horizons, I guess.  I'm looking for ideas on spices, foods, things like that.  I like Tex-Mex and southern cooking.

How about an omelett of some sort?  Eggs are so versitile, just use your imagination or your favorite flavors, and you can make a great omelett.

Some suggestions:

for tex-mex, use salsa, or chop up some onions and peppers...
do you like mushrooms?  with some thinly sliced steak and onions...
don't forget the cheese!  try a pepper jack or other spicey cheese...

I can consult my cookbook for more specifics for you.

Actually, I really love scrambled eggs with cream cheese - it makes them so creamy and....oh, yum.

But if you like the Tex-Mex spicey stuff, a Spanish Omelette is always good and pretty easy. That's my brother's favorite.

Make breakfast burritos, I know you have tortillas. Egg, cheese, you can add spicey sausage, salsa, or whatever you want. Eggs are good bc there are so many things you can do with them and make with them. Just look around your kitchen.

I like to crumble up some breakfast sausage in the pan and fry it and then add the eggs,a nd scramble them up together. Add some cheese, and sometimes salsa, sour cream.

I forgot about this, because my entire carton of eggs expired, and had glowing green yolk.  Ha-Ha  I don't like vegetables, but I like sauces and spices.  And meat.  Meat is good.
