Mango Curry by keza203 Ingredients:
Extra virgin olive oil spray 2 cloves garlic, crushed 1 tbs of ginger, peeled and grated (lol i use the pre crushed stuff) 4 ts of curry spice 1 cinnamon stick (or 2 teaspoons of the spice) 1 fresh chilli, seeded and finely chopped 1 tbs of brown mustard seeds 5 medium mangos, peeled stoned and pureed 2 cups of vegetable stock 1 lemon juice 1kg of chicken breast, cut into strips
Method:
Heat lightly oiled saucepan over high heat, sauté garlic, ginger, curry spice, cinnamon, chilli and mustard seeds until fragrant (approx 2 minutes).
Reduce to medium heat and add mango puree, stock, lemon and chicken. Simmer covered for 25 minutes until tender.
