Beef Tenderloins & Greens Dijon Choose dark greens for nutrition  1 lb beef tenderloin tips, trimmed of fat and cut into  1" x 1/2" pieces ; 1/2 cup olive oil, plus 1 tablespoon;  1/2 tsp salt ; 1/2 tsp pepper, divided ; 1/4 cup Dijon mustard ; 1/4 cup balsamic vinegar ; 1 clove garlic, crushed ; 1 tsp sugar ; 10 oz package mixed salad greens ; croutons; To make dressing, in medium bowl, whisk together 1/2 cup  olive oil, mustard, vinegar, garlic, sugar and 1/4 teaspoon  pepper until creamy. Set aside.  In large nonstick skillet, heat 1 tblspn olive oil over medium -high heat until hot.  Add beef (half at a time) and stir-fry 2 to 3 mins or until  outside surface is no longer pink. (Do not overcook.)  Season with 1/2 tspn salt and 1/4 tspn pepper.  In large bowl, combine greens and 1/2 cup of the reserved  dressing. Toss to coat.  Arrange greens on serving platter and top with beef and  croutons.  Serve immediately, adding additional dressing as desired. yield: 4 servings prep time: 15 mins cooking time: 5 mins  |
