Walnut Surprise Coffee Cake
2 cups flour;
1 tsp. baking powder ;1 tsp. soda;
1/2 tsp. salt ;2 cubes margarine ;
1 cup sugar ;2 eggs ;
1 tsp. vanilla; 1 cup sour cream ;
Sift the dry ingredients together and set aside.
Cream margarine with sugar and add eggs and vanilla.
Add sour cream alternately with dry ingredients.
 In a separate bowl, mix
1/3 cup brown sugar, packed; 1/4 cup white sugar ;
1 tsp. coffee; 1 cup chopped walnuts ;
Spread 1/2 the batter in a greased 9 x 13 inch pan.
 Sprinkle half of the nut mixture on top and repeat
with the other half of batter and nut mixture.
Bake at 350 degrees F. for 35 minutes.
This cake freezes well.

Amish Coffee Cake
3/4 cup sugar; 1/4 cup shortening;
1 egg; 1/2 cup milk ;
1 1/2 cup sifted flour; 1 1/2 tsp. baking powder ;
1/2 tsp. salt ;
Cream sugar and shortening and add the egg.
Sift together the dry ingredients and add
alternately with the milk.
Topping:
1/2 cup brown sugar ;2 Tbsp. flour ;
2 Tbsp. melted butter; 1/2 cup nuts ;
2 tsp. coffee ;2 Tbsp. water.
Mix together.
Spread 1/2 the batter in a square greased
 floured baking pan. Spread 1/2 of the topping
on and swirl. Repeat the steps again.
 Bake at 375 degrees F. for 30 mins.

My Favorite Spiced Apple Coffee Cake
1 cup sugar ;2 cups flour ;
1 tsp. baking powder ;1 tsp. soda ;
1/4 tsp. salt ;1/2 cup shortening ;
1 egg ;1 cup milk ;
1 tsp. vanilla ;4 or 5 chopped apples ;
Mix the dry ingredients and the shortening until
it becomes crumbs. Add the egg, milk and
vanilla and mix well. Lastly, add the chopped apples.
Pour into a greased 13 x 9 inch pan and add the topping.
Topping:
3 Tbsp. melted butter ;1 cup brown sugar, packed
1/2 cup flour; 1 tsp.coffee; 1tsp cinnamon;
1 cup chopped nuts ;
Mix together and spread over batter.
Bake at 350 degrees F. for about 45 mins.
