Mixed Stir-Fry
5 servings.
Ingredients:
1/4 cup all-purpose flour 
2 tsps salt 
1/4 tspn pepper 
1/4 tspn ground cumin 
1 lb. boneless sirloin steak, cut into thin strips 
1 tablspn vegetable oil 
1 (14.5 ozs) can diced tomatoes 
3 medium carrots, julienned 
1/2 c. finely chopped onion 
1/2 tspn dried basil 
1/4 tspn dried oregano 
1 c. julienned zucchini 
1 1/2 c.s sliced fresh mushrooms 
Hot cooked rice 
Directions
In a shallow dish or resealable plastic bag, combine the first four ingredients. 
 Add meat and toss to coat. Pour oil into a shallow 2-qt. microwave-safe dish; 
arrange meat evenly in dish. Cover and microwave at 50% power for 6 mins, 
 stirring once; set aside. Drain tomatoes, reserving juice;  set tomatoes aside. 
In microwave-safe bowl, combine tomato juice, carrots, onion,  basil and oregano. 
Cover and microwave on High for 4 mins, stirring once. Pour over meat; 
 add tomatoes, zucchini & mushrooms. Cover and microwave at 50% power for 12 mins, 
stirring several times. Let stand for 3 mins. Serve over rice.
