Peti Pois:[French Green Peas]
 4 lb Green Peas
 2 oz. Butter
 Bouquet Garni
 2 TSP Sugar
 Salt
 1 Lettuce Heart
 6 Tiny Button Onions
 1 Eggyolk.
 Put butter.bouquet garni,sugar & salt in bottom of heavy pan.Place sliced lettuce 
 heart on these, then tiny onions . put shelled peas on top and cover with tight 
 fitting lid.,cook for an hour on very low heat.,shaking pan . Just before serving ,
 remove bouquet garni, Beat eggyolkwith 1 tbsp.water & strain liquid from pan into
 it.Keep this in warm place but don't boil. Put veges in serving dish and pour eggyolk
 liquid over and serve immediately.
