Rosbif:[Roast Beef]
4 lb Sirloin or topside of Beef
1&1/2 oz.Butter
3-4 tbspsWater
Salt & Black Pepper
Remove excess fat from joint,Sprinkle with Black Pepper,cover with the butter ,place on
grill or rack in roasting pan.place water in pan cook in very hot oven basting with juices
from time to time. Should take an hour.for rare meat;15 mins longer for medium -well
done.Add more water to pan juices to make a gravy as an accompaniment for ROSBIF.
