Good Morning Everyone!
(Actually...it is the middle of the night!)
 
I can't sleep...mind is zooming around inside my head @ 100 miles per hour!!!!!!!
 
Help yourself to the coffee.
 
 
I need coffee like another whole in my head BUT what the hey!
 
I haven't walked the "hounds" yet...they can wait until 4:30!!!!
 
Thursday was a good day....the work went smooth...was home by 3:30!
 
Made shake and bake for supper, boiled 'taters & corn niblets!
 
It was really good.
 
No 'zert.
 
Maybe that is why I can't sleep?...lol...needed something sweet!
 
What are you going to do today?
 
All ready for the holidays that are coming?
 
We have 3 places today....nothing spectacular...
 
I have nothing to talk about this morning...so will look for the share...& get on with it...!

Secret Sauce Meatballs

Metric Ingredient Imperial
1 can tomato soup 1
125 ml brown sugar 1/2 cup
40 ml lemon juice 3 tbsp
1 medium onion, chopped 1
750 g lean ground beef 1 1/2 lb
1 egg 1
50 ml fine breadcrumbs or oatmeal 1/4 cup
1 small onion, finely grated 1
1 carrot, finely grated 1
- salt & pepper to taste -
In slow cooker or large heavy pot; whisk together soup, sugar and lemon juice. Add chopped onion. Heat to a gentle boil.

While sauce is heating, mix beef, egg, breadcrumbs or oatmeal, grated onion, grated carrot, salt and pepper. Make meatballs to desired size. When sauce is boiling gently, add meatballs.

If cooking on stovetop, cook at a gentle simmer for one hour. If using a slow cooker, cook on high for four hours or start at high for sauce and reduce to low for five to six hours. Serve over rice or broad noodles.
