I was delivered a whole heap of paninis ,herbed and plain .... so
decided to freeze them down .some were fried in olive oil and for use in soup as long croutons .others were crisped in olive oil and diced . so all set for a nice soupy night or lunch . when the opportunity arises do these things in advance . "specials "are hard to figure out what to do with sometimes .so a whole lot of free bread goods are easy to prepare for winter -as in summer when its too hot to do much else .and paninis are so great for meals in summer .I have a 1/2 of one with baked beans and lettuce for brunch and later on the other 1/2 with stacks of lettuce and tomatoes and other summer veges. the next day its usually potato with lettuce and no paninis at all but plenty of water .we need it here at the moment .so easy to get dehydrated . 30C is common for temps at this time of year .
