What is everyone up to today?
 
I left last nights' supper dishes, so have them to do......then I guess I will be messing around on here.
 
Nice day out there.....didn't go out this a.m. until nearly 8:30! "The Ladies" had their legs crossed!...lol...we only went to the park too.......that put a dent in their routine ....but hey!......dh will have them out another 25 times between now and supper time!.....lol.....well at least 15 times!
 
I don't have any news to tell today.....except the drive home in the rain on Saturday.....was terrible.
People need to be cautious BUT they don't need to be down-right stupid!
No wonder there is so much "road-rage"!
 
I totally understand it.
 
IF you are nervous about driving in bad weather....stay home OR have someone else , who may feel more relaxed & confident driving in diverse situations......behind the wheel of the vehicle.
 
And for sure......IF there are "choices" provided for where you may drive....ie:..."Express/Through Lanes" OR "Collector/Slower Lanes"......choose the one with the SLOWER traffic!
 
AND in Canada......we DO NOT drive in the "LEFT-hand" lane......except for passing/overtaking a SLOWER vehicle.
Stay the heck outta it,.... to travel the TOTAL 20-some miles to work!
 
Okay....can ya tell I am sooooooooo fed up with "Lack of Highway Ettiqette"?
I want to run these idiots into a ravine somewhere!

Tuna Patties ......
2 cans tuna (drained, but not squeezed dry!
1 package seasoned stuffing mix ( Stovetop Chicken/experiment!)
2 eggs
1/3 cup mayonnaise
½ tsp[ dill (optional, but I added it)
oil for frying I used a very small amount

Mix all together, form into patties, and fry until golden on each side.
This recipe may be halved very easily!

Rhubarb Custard Tart.......

Pastry for single crust

Topping
1/2 c flour
1/2 c brown sugar
1/4 c quick cooking oats
1/4 c butter, softened

Filling
3/4 c sugar
3 tbsp flour
1/2 c whipping cream
2 tbsp apricot or peach preserves
1 egg yolk
3 c sliced fresh rhubarb, or frozen, thawed & drained
Place Pie crust in a 9 inch tart pan with removable bottom or 9 inch glass pie pan.
Trim edge if necessary.
Place cookie sheet on middle oven rack in oven to preheat; heat to 375°.

In a small bowl, mix 1/2 c flour, brown sugar and oats.
With fork or pastry blender, cut in butter until crumbly; set aside.

In a large bowl, mix sugar and 3 tbsp flour.
Stir in whipping cream, preserves and egg yolk until well blended.
Stir in rhubarb.
Pour filling into crust lined pan.
Sprinkle topping evenly over filling.
Place tart on preheated cookie sheet in oven; bake 40-50 minutes or until filling bubbles around edge and topping is deep golden brown.
Let stand 30 minutes before serving.

Pineapple Secrets/Bars
1 cup sugar
2 T. cornstarch
2-1/2 cups crushed pineapple with juice
1-3/4 cups flour
1 cup brown sugar
1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 cups rolled oats
3/4 cup butter

For filling:.... combine sugar and cornstarch in small pan.
 Add pineapple and juice.
 Cook over medium heat until thick; set aside.
Combine flour, brown sugar, soda, salt and oats; cut in butter until mixture is crumbly. Place half of crust mixture in greased 13x9 pan; pat down firmly.
Spread filling evenly on top; add remaining crust and pat down as firmly as possible. Bake @ 400 degrees for 25-30 minutes.
 Cool; cut into 20 bars.

Monster Cookies.........
3 eggs
1-1/4 cups packed light brown sugar
1 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter ,(1&1/2 cups)
1 stick butter, softened
1/2 cup multi-colored chocolate candies (M&M's)
1/2 cup chocolate chips
1/4 cup raisins, optional (also have used Craisins)
2 teaspoons baking soda
4-1/2 cups quick-cooking oatmeal (not instant)

Preheat the oven to 350°F.
Line cookie sheets with parchment paper or nonstick baking mats.
In a very large mixing bowl, combine the eggs and sugars.
Mix well.
 Add the salt, vanilla, peanut butter, and butter.
Mix well.
Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal.
Drop by tablespoons 2 inches apart onto the prepared cookie sheets.

Bake for 8 to 10 minutes.
Do not over bake.
Let stand for about 3 minutes before transferring to wire racks to cool.
When cool, store in large resealable plastic bags.
Note: I had to cook longer for my oven. 
Just be careful!
They are supposed to be a golden color.

No-Bake Maple Peanut Butter Cookies....
1 and 1/2 cups sugar
1/2 cup creamy peanut butter
1/2 cup milk
2 teaspoons vanilla extract
1/4 cup pancake syrup, maple flavored
2 cups quick cooking rolled oats

In a heavy medium size saucepan, combine sugar, milk and maple flavored syrup.
Bring to a rolling boil, stirring frequently.
Boil for 3 minutes.
Stir in peanut butter and vanilla.
Then add oats.
Drop by rounded teaspoons onto waxed paper.
Cool for 3-4 hours, until firm.

Good luck with letting them cool, before you "sample"!

this is Tuesday ,and I have been out to town .
chemist/
carpet shop/
2nd hand shop [got a free platter for the pastor's cuppa . ]
herbal shop /[got a thyme plant & a jalapeno pepper]
paper card shop [-got my mum's birthday card /special diary and folder for all my papers ]
supermarket.[then got some milk and cheeses  and stamps.
good long walk in the sun.

many thanks for the recipes .got them onto my "notepad" so will put them all up later .
at least that works .!
new pc and little things I gotta get used to . totally different from the win 98. version .
this is basics.Windows Vista is what I' ve got .
well who wants the top notch latest versions anyway.
I just got this as the hard drive was shot.and it had all the recipes in . as was ypours too. but got it saved . and installed again.
 
  Time for Mother's day over here . next Sunday.

I really enjoy your posts and recipes. It sounds like you had a hard day on the road driving. Do you have dogs? I thought maybe the comment on Ladies was your dogs going in and out. What kind are they?

well Wanda looks like you and I are the only ones posting.
hope that Carol is ok.
We have a young lady at our church and she says that Toronto has had
real miserable weather up there . she comes from Canada .
So, when I see the temp gauge on her posting I know its for real .

Good Monday, Aug.25/08, Morning! Found this old thread so thought I would use it!
 
I am home today and can ya tell....just after 3:00 a.m. and I can'y sleep so am up doing laundry!!!!!!!!!
 
I have no idea where to start my "tale of woe".......BUT I will say it started in April 03, 1993<<<(day one of possession here)......and it just finished Aug. 15th./08 (well technically it won't be finished until Feb. 28/09....but that is another "tale" all on it's own!) The last few months we have been in & out of court with law suits...they still owe me nearly $2000 for damage caused to my Oldsmobile and I still have not totally compiled the list of "contents" from our on-site locker they took upon themselves to toss BeCAUSE they said it was abandoned!!!!!!!!!!! We were not the only ones that had their "life tossed"......so we are all suing!!!!
 
Anyway....we are moving and in the last 2 days.....I have packed in the area of 47 "cube"-sized boxes......size = 15&1/2"x 13"x 18"!!! I bet I have another 50 to do too! We have 2 apartments to "sort, toss/purge, pack & empty"! Neither apartment do we have to empty by/at/on the same date, so we do have some lee-way there.......one OR both,... we have set a goal for sure by Feb. 28/09, to be gone from this apartment complex!

It is amazing what you can accummulate in 40 years of marriage along with living in one place for 15 years! Ya get sooooo in the groove of what ya need and what "is nice to have around"......BOY!........am I travelin' light....the next time!!!!!
 
Anyway.......that is what I have been doing........my own groups are failing because of it  BUT as "Ol Blue Eyes" once said.......
"That's Life"!
 
We have rented a townhouse/southern exposure....nice, clean, bright, newly sanded hardwood floors, 1 & 1/2 bathrooms, full basement with laundry tubs,(basement not finished but soon will be!.....),HUGE eat-in kitchen, large living room/dining room, 3 bedrooms, washer, dryer, frig. & stove,(& I think a dishwasher; if NOT I have one),.....& best of all.......a gorgeous fenced-in-gated/locked back yard area WITH GRASS.....for "The Ladies".
We get possession on Sept. 12th.
 
I am very excited....I meet with my client/Friend today,... to see about carpet for the Master and stair runners.
 
Anyway.....that is what has been keeping "outta the pool-halls & off the street corners".....along with my business is going nuts too! (The rental agent where we got the townhouse has hired us to clean her new place!!!!!!)

when I shifted I had an empty garage to come to , but now its chokka!
so last weekend I gifted my son my old fridge . [he's in sore need of a bigger one ]
and then I have to think of how to get rid of a old microwave .
and a few other things too which are bulky.
so I thought I was going light , well watch out , after a few months you
see that you need a few more items and renew older stuff  
and then the garage is full again. in my case it's over full.
well my lounge lights are fixed.  but my pantry ones need renewing 
and I have 2 new lampbases, plus a few old shades that need a new home .
             and      where are they ?   =
 
out in the garage !
