Rhubarb & Lemon Jam:
To 1lb. of rhubarb allow 1 lb. of sugar.
For 4-5 lb.rhubarb allow 2 small lemons.
Cut up rhubarb into small pieces and cover
with the sugar, Leave overnight.Next day, boil
up after adding the grated rind and juice of lemons.Drop in piece of butter [size of a walnut] before taking off..Boil about 1hr.,or till it will set.
Note: rhubarb jam is always fairly liquid.
