Barbecue Meatloaf Aussie Style
1 lb Ground beef - lean;1 lb Sausage stuffing;
1 c Breadcrumbs - fine;2 Onions - medium, chopped fin;
1 tb Curry powder;1/2 c Water;
1 Salt and pepper to taste;1 tb Parsley - chopped;
1 Egg - beaten;1 Garlic clove - crushed;
1/2 c Milk;
Sauce:
1 Onion - chopped very fine;1/4 c Water ;
1/2 c Ketchup ;1/4 c Dry red wine or beef stock;
1/4 c Worcestershire sauce ;2 tb Vinegar;
1 tb Instant coffee;1/4 c Brown sugar - packed ;
1 oz Margarine; 2 ts Lemon juice ;
Loaf:: Combine meats, breadcrumbs, onions,
salt, pepper, garlic, parsley, curry and egg in large bowl.
Mix well. Mix milk and water and add to meat mixture
 a little at a time until smooth but firm.
Shape into loaf and put into greased baking pan.
Bake 30 mins at 375 degrees F.
Sauce:: Saute onions in margarine until golden and
 add all other ingredients. Bring slowly to a boil,
lower heat and simmer 10 to 15 mins. (great with
 ribs or chicken). After loaf has cooked for 30 mins,
 pour half of sauce over meat, return to oven -bake
45 mins more, basting often with remaining sauce.
Serve loaf hot in thick slices with remaining sauce.
Also makes great sandwiches

Dutch Meatloaf
1 1/2 lb Ground meat.1 c Breadcrumbs;
8 oz Tomato sauce. w/onions;2 tb Mustard;
1 tb Vinegar;1 1/2 ts Salt;
1/4 ts Pepper;2 tb Brown sugar;1 Egg;
Mix meat, breadcrumbs, 1/2 tomato sauce, egg,
salt & pepper. Shape into loaf.
Combine remaining ingredients with 1/2 tomato sauce.
 Pour over meat. Bake at 350 degrees for 75 mins

German Applesauce Meatloaf
Vegetable oil;1 1/2 lb Ultra-lean ground beef;
1/2 lb Ground pork;1/2 c Finely diced onion;
1 c Applesauce;1 Egg, beaten to blend;
1 c Bread crumbs;3 tb Ketchup;
2 ts Salt;1/4 ts Black pepper
Lightly oil a 9 X 5 inch loaf pan.
In a large bowl, combine beef, pork, onion, applesauce,
 beaten egg, bread crumbs, ketchup, salt and pepper;
 mix well. Place mixture in a preheated 350 degree oven
1 1/2 to 2 hours. Let cool 15 mins.
 Turn out loaf; slice to serve.

Greek Meatloaf
1 lb Ground beef chuck;1 lb Ground lamb;
2 lg Eggs;1 c Fresh bread crumbs;
2 Bunches green onions, minced;
4 oz Feta cheese, finely crumbled;1/4 c Minced fresh parsley;
1 T Dried mint leaves;2 T Olive oil;
1 T Red wine vinegar;2 Garlic cloves, minced;
1/2 t Salt;1/4 t Ground black pepper;
Preheat oven to 375 degrees. In large bowl,
 mix all ingredients just until well combined
 but not overmixed. In 13x9 metal baking pan,
 shape meat mixture into 9x5 inch loaf.
Bake meat loaf 1 hour and 15 mins.
Let stand 10 mins before slicing.

Italian Meatloaf
2 lb Lean ground beef;1 lb Italian sausage
1 1/2 c Cracker crumbs;2 Eggs, beaten
1 md Onion, chopped;1 Bell pepper, chopped
1/2 ts Salt;1/4 ts Pepper
1 ts Oregano;1 cl Garlic, minced;1 c Pizza sauce
Filling:
1/2 lb Boiled ham,
sliced thin 8 oz Grated Mozzarella cheese ;
1 cn (8 oz) mushrooms, drained
Mix first eleven ingredients together.
Reserve 1/4 cup pizza sauce.
On large sheet of wax paper,pat meat into a 10 x 13"
 rectangle. Arrange ham on top of meat mixture,
 leaving a small margin.Spread mushrooms over ham.
Sprinkle cheese over all.Reserve small amount of cheese
.Start at 10" size and roll meat like a jelly roll.
Use wax paper to lift.When rolled tightly, seal edges
.Place seam side down in a 9 x 13" pan.
Brush with reserved pizza sauce.
Bake 1 1/4 hrs @ 375 degrees, 10 mins.
Before done, sprinkle reserved cheese over
and finish baking.Serves 10 to 12.

Meatloaf Ring
1 lb Ground beef, lean.1/4 ts Pepper;
1 Egg; beaten;1 ts Garlic salt; OR 1 Garlic clove; minced;
6 Soda crackers; OR 1/4 c Bread crumbs, dry;
1 sm Onion; minced;1 T Parsley, fresh; minced;
3/4 ts Salt;1/4 c Bell pepper, green; chopped;
1/4 c Celery; chopped;1/2 c Tomato juice;
1/4 c Catsup
Thoroughly combine all the ingredients except the catsup.
Pack lightly into a nine-inch glass dish,
 making a well in center. Place an empty glass,
 right side down, in the center of the dish.
 Microwave on HIGH for six mins, rotating
one-quarter turn halfway through cooking.
Drizzle the catsup over the top. Microwave on
HIGH for five mins longer, rotating one-quarter
turn halfway through cooking.
Let the loaf rest for five mins.
Remove glass; baste off drippings.
If time is not a factor, you can cook it with the
following times: MEDIUM-HIGH (70%)
for nine to ten mins in step 1.
MEDIUM-HIGH (70%) for seven to nine mins in step 2.

Meatloaf Wellington
1 lb Ground beef;1/2 lb Ground veal;
1/2 lb Ground pork;1 ts Worcestershire sauce;
2 Eggs;1 1/2 c Cracker crumbs;
3/4 c Ketchup;1/2 c Warm water;
1 pk Dry onion soup mix;4 Bacon strips;
2 pk Crescent roll dough;
1 Egg white,lightly beaten With 1 tbsp. water
Flour

Heat oven to 350 degrees. Mix meats together by hand
 in a large bowl. Add Worcestershire sauce, eggs,
cracker crumbs, ketchup, water and soup mix.
Mix by hand and shape into a loaf in a shallow baking dish.
 (For cleanup ease, use non stick cooking spray.)
Drape the loaf with bacon strips.
Bake 1 1/2 to 2 hrs or until done. Cool 10 to 15 mins.
Separate 2 packages of crescent roll dough into 6 rectangles
 (2 crescent forms make 1 rectangle).
Reserve the remaining 2 for decorating.
Overlap the triangles on a large floured surface to make a
large rectangle. Gently press together the seams and perforations.
Place over meat loaf and mold to fit. Trim off excess dough.
Use remaining rectangles to make a design for the top;
cookie cutters may be used. Brush dough with egg white
and return loaf to the oven for 15 to 20 mins or until golden.
Makes 6 to 8 servings.

Mexican Meatloaf
1 lb Lean ground beef1 lb Ground veal;
3/4 c Pitted black olives, coarsely chopped;
1/2 c Yellow cornmeal;2 lg Eggs, lightly beaten;
1 md Onion, chopped;
1/4 c Pickled sliced jalapenos, chopped;
2 lg Garlic cloves, chopped;
1 ts Best quality chilli powder;1 ts Dried oregano;1 ts Salt
Seasoned with cornmeal, chiles, and olives, this is a spicy,
 Southwestern rendition of meatloaf.
Hot pepper jelly makes a delicious accompaniment,
or brush on the jelly while it's baking to glaze the meatloaf.
Preheat oven to 350F. Combine all ingredients in large bowl
(hands work best for mixing)
Gently pack mixture into greased 9x5x3 inch loaf pan.
Bake for 1 1/4 hours or just until cooked through. Serves 8.

Microwave Meatloaf
1/4 c Dried Chopped Onion;1 1/2 lb Ground beef;
3/4 c Bread crumbs;1/4 c Parsley sprigs;
1/2 ts Pepper;1 cn Tomato sauce; 8 oz.;
1 Egg;1 Carrot;3 tb A1 Sauce;
1/2 ts Dried Oregano;
Topping
1/2 cn Tomato paste (3 oz)
In food processor, shred carrot.
Add remaining ingredients except for the tomato paste.
 Process until blended. Invert a 6 oz custard cup
in center of a 9" glass pie plate.
Shape mixture into a ring around cup.
Spread the tomato paste over the top of the meat loaf.
 Cook in microwave on high 15 mins or until juices run clear.
Pour off any fat from dish before slicing.

Savory Stuffed Meatloaf
1 1/2 lb Lean Ground Beef;1/2 c Milk

1 Egg; Lg;1 ts Salt;1/4 ts Pepper
Meat Loaf Stuffing
1/2 c Butter Or Margarine;
1/2 c Celery/Leaves- Chopped;1/4 ts Salt;
1/8 ts Thyme;1 tb Worcestershire Sauce;
1/4 c Onion; Chopped,;2 c Bread Crumbs; Fresh;
1/4 ts Sage;2 tb Parsley; Snipped;1 ds Pepper;

Heat the oven to 350 degrees F.
Mix all of the ingredients except the stuffing together.
Spread 2/3rds of the mixture into an ungreased loaf pan
 9 X 5 X 3-inches, pressing the mixture up the sides of
the pan to within 3/4 inch of the top.
 Spoon the stuffing onto the mixture in the pan and
then top with the remaining meat mixture covering
 the stuffing completely.
Bake in the oven for 1 hour & 10 mins.
Drain off the excess fat and let stand for 5 to 10 mins
 before slicing into thick slices. Serve on a heated platter.
MEAT LOAF STUFFING: Melt the butter in a large skillet.
Add the onion and the celery and cook an stir until the
 onion is tender. Remove from the heat and stir in the
 remaining ingredients.

Something Different On A Budget Meatloaf :
1/4 lb Ground chicken;1/4 lb Ground pork;
1/4 lb Ground beef - lean;1/4 c Whole milk;
2 Eggs - lightly beaten;1/2 c Breadcrumbs;
1/2 c Honey;Pepper and salt to taste;
Glaze
2 tb Hot mustard;1 ts Garlic - crushed;
1/4 c Apricot jam;
Mix chicken, pork, beef, eggs, breadcrumbs, milk,
 honey and salt and pepper.
Shape into a loaf and put in pan.
Mix glaze ingredients together and spread over top of loaf.
Sprinkle with additional breadcrumbs.
Bake in 325F oven for 1-1/2 hours. Servings: 6

Swedish Meatloaf :
1/2 c Oatmeal;1/2 c Milk;2 Eggs;
1 1/2 lb Ground beef;1/3 c Onion, minced finely;
2 tb Margarine;1/4 ts Garlic powder;1/2 ts Nutmeg, grated;
1/2 ts Sage;
1 1/2 ts Salt;1 ts Mustard powder;
Mix oats and milk; add eggs and beat.
Pour over meat and mix well.
aute onion in marg til tender. Add to meat.
Mix dry ingredients together and mix into meat mix.
As a loaf, bake at 350F 1-1/4 to 1-1/2 hours.
As meat balls, form into balls, brown and remove to a plate.
 Make sauce with leftover pan drippings and
mushroom soup. Serve with mashed potatoes.

 Tennessee Meat Loaf
2 lb of chopped ground round ;
1 large can of tomato sauce ;3 pods of garlic chopped ;
1 large onion chopped ;
1 -8oz pk of extra sharp chedder cheese shredded ;
2 pks of meatloaf seasoning; 1 1/2 cup of oats;
1 large bell pepper chopped well ;2 eggs ;
garlic salt and garlic power about 10 shakes of each
Then mix all items together only using 1/2 can
of tomato sauce in mixture. after mixed well,
form a loaf in loaf pan and pour the other half of
 tomato sauce over the top .Top with onion slices
 and bell pepper slice and bake for 1 hr at 350
 degree cool and slice .

 Mustard-Apple Meat Loaf
2 pounds lean ground pork
1/2 cup applesauce
1/2 cup dry bread crumbs
1 1-ounce envelope dry onion soup mix
2 tablespoons Dijon-style mustard
Black pepper, to taste
In large mixing bowl, blend together ground pork,
applesauce, breadcrumbs, onion soup mix,
Dijon-style mustard and black pepper to taste.
Turn mixture into loaf pan and bake in 375º F
oven for 1 hour 15 minutes, until meat
thermometer inserted reads 160º F.
Let loaf rest 10 minutes before slicing to serve.
Serves 4-5, with leftovers
Optional: Top meat loaf with brown sugar and 2-3 slices
bacon 30 minutes before done.
