Brush olive oil over griddle or frying pan and cook the chicken until it is done (15-20 mins) While the chicken is cooking, blend all the other ingredients (not the parsley) until smooth and then transfer to a saucepan Simmer for 3-4 minutes and then spoon on to plates Place the cooked chicken on top and garnish with parsley
