SHEEP'S HEAD BRAWN. Clean one head, place in a saucepan with two quarts of water. Boil gently till meat comes off the bones; then remove bones, put meat back in saucepan. Add one large onion, two or three sprays of parsley finely chopped. Season with pepper and salt to taste. Boil all together for one hour. Pour into a basin, and let- stand till next day. This makes 2lb of brawn. |
