Beef Tenderloins & Greens Dijon Choose dark greens for nutrition 1 lb beef tenderloin tips, trimmed of fat and cut into 1" x 1/2" pieces 1/2 cup olive oil, plus 1 tablespoon 1/2 tsp salt 1/2 tsp pepper, divided 1/4 cup Dijon mustard 1/4 cup balsamic vinegar 1 clove garlic, crushed 1 tsp sugar 10 oz package mixed salad greens croutons . To make dressing, in medium bowl, whisk together 1/2 cup olive oil, mustard, vinegar, garlic, sugar and 1/4 teaspoon pepper until creamy. Set aside. . In large nonstick skillet, heat 1 tblspn olive oil over medium-high heat until hot. . Add beef (half at a time) and stir-fry 2 to 3 mins or until outside surface is no longer pink.
