Avocado Bacon Blue Salad.
1tbsp . vinegar, 2tsps. Dijon mustard,
60g[2oz] blue vein cheese [mashed],
1/3 c. vege oil. salt &freshly ground pepper,
1 large avocado.[pitted-peeled
& thinly sliced lengthwise], lettuce leaves,
3 rashers of rindless bacon [chopped],
1 tbsp. finely chopped mixed parsley & chives.
In small bowl , whisk together vinegar and mustard,
mash cheese into mixture.
then gradually add oil ,whisking constantly until blended.
Season to taste.
Arrange avocado slices on to 2 lettuce lined
serving plates. Fry bacon until crisp,
drain well and sprinkle over avocado.
Just before serving ,drizzle dressing over salads
and sprinkle with herbs.
