Veggie Rice Salad
Ingredients
1 c. cooked rice; 1/3 c. shredded carrot;
1/4 c. diced celery
1/4 c. diced green pepper;
1 small green onion, thinly sliced;
2 TBLS vegetable oil;
2 TBLS cider / red wine vinegar;
1/2 tsp. sugar; salt & pepper to taste.
Procedure ;In a bowl, combine first 5
ingredients.In jar with tight fitting lid,
combine oil, vinegar, sugar, salt & pepper;
shake well.
Pour over salad and toss. Chill until serving.
