REUBEN'S JUICY RELATIVE

1 lb Bulk pork sausage
1 cn Sauerkraut, (14 oz), drained
2 ts Caraway seeds
2 tb Brown sugar
2 tb Spicy brown mustard
2 Rye bagels, toasted
1/4 c Thousand island dressing
4 Swiss cheese slices

Form sausage into 4 patties. Fry patties in skillet over medium heat until cooked & brown, about 5 minutes on each side. Drain on paper toweling. Heat oven to 375°F. Mix sauerkraut, caraway seeds, brown sugar & mustard in small saucepan; heat until hot. Spread bagels with dressing, spoon half the sauerkraut on bagels; top with sausage patties, remaining sauerkraut & cheese. Wrap each bagel in aluminum foil. Bake 20 minutes. Unwrap; serve hot.

Phillie beef sandwiches
2 Tbls. butter or margarine
1 large onion coarsely chopped (1 cup)
2 cups sliced mushrooms (6 oz)
1 small green pepper chopped
6 kaiser rolls, split
1 container (3 cups) Herbed Roast Beef ml), thawed if frozen
6 slices provolone cheese
Melt butter in 10" skillet over medium-high heat. Cook onion, mushrooms and bell pepper in butter about 5 minutes, stirring occasionally, until veggies are tender.
Set oven control to broil. Place bottom halves of rolls on ungreased cookie sheet. Top with veggie mix, beef and cheese. Broil 4-6" from heat for 2-3 minutes or just until cheese is melted. Top with tops of rolls.

Pita bread pockets & fillings:
Honey-Mustard ham filling:
1 cup chopped cooked ham
2 tbsp. honey-mustard
1 tbsp. finely chopped red onion.
Country sausage filling:
6 ounces bulk pork sausage cooked and crumbled
1/2 cup shredded cheddar cheese
1/2 cup chopped apple
Italiano Pocket Filling:
1 cup sliced cooked Italian sausage
1/3 cup shredded mozzarella cheese
1/3 cup green pepper
1/3 cup pizza sauce
Spoon about 2 tbsp. filling into the center of the pita bread ;. Bake at 400°F 10-13 minutes or until golden brown!

CORNED BEEF AND SLAW SANDWICH
4 slices whole wheat bread, toasted
8 teaspoons spicy brown mustard
8 ounces thinly sliced deli corned beef
1/2 pint vinaigrette-type deli coleslaw
4 (1-ounce) slices Swiss Cheese
Heat oven to 350°F. Spread each slice of bread with 2 teaspoons mustard.
To assemble each sandwich, layer 1 slice bread, 2 slices corned beef, 1/4 cup coleslaw and 1 slice cheese.
Place sandwiches on baking sheet. Bake for 8 to 10 minutes or until cheese is melted.
Yield: 4 sandwiches

1 pkg cream cheese
1 stick butter or margarine
1 tbs Itailian spices
Mix these together.
Spread on soft french roll - top with a slice of deli ham or two, a slice of tomato, then sprinkle liberally with parmesan cheese and broil until golden! This is served open face.

MONTE CRISTO SANDWICHES
1/2 cup mayonnaise
1/4 tsp. ground nutmeg
1/8 tsp. freshly ground pepper
12 slices white bread, crusts removed
6 slices Swiss cheese
6 slices cooked ham
6 slices cooked chicken
2 eggs
1/2 cup milk
In a small bowl, combine mayonnaise, nutmeg and pepper; spread on one side of each bread slice. Layer cheese, ham and chicken on 6 bread slices; top with remaining bread, mayonnaise sides down. Cut sandwiches diagonally into quarters. In small bowl, beat together eggs and milk; dip sandwich quarters into egg mixture. Cook on preheated greased griddle or in skillet, turning once, 4 to 5 minutes or until browned and heated through.

Carrot Sandwich Spread
1-8oz.cream cheese,softened
1 stick oleo,softened
4 carrots,grated very fine(about 3/4c.)
2T.grated onion
2T.minced green olives with pimento
Dash of white pepper
Recipe
Mix all together and chill.
This is best on thinly sliced pumpernickel bread.
It makes such pretty tea sandwiches.People always think it's pimento cheese.I sometimes add a little minced celery.

Cheesy Vegetable Spread
ingredients for 6 servings:
1 c Shredded Farmer Cheese(4 oz)
3 tb Plain Yogurt
1 ts Lemon juice
1 ts Soy sauce
1/4 c Chopped Apple
1/4 c Chopped Carrot
2 tb Chopped Pecans
2 tb Currants
1 tb Toasted Wheat germ
1/2 ts Curry powder
Preparation: In food processor, process cheese, yogurt, lemon juice, and soy sauce until smooth. Stir in remaining ingredients. Use as a spread on crackers, whole wheat bread, or pita crisps, or stuffed into pita pockets. Makes 1 1/2 cups Variations: - substitute shredded Cheddar for the farmer cheese Spread may be made in advance, and refrigerated 3-4 days.

crab sandwich spread
1 lb. lump crabmeat
2 Tbs. plus 2 tsp. low fat mayonnaise
2 tsp. fresh parsley, minced
2 tsp. fresh tarragon, minced
1 Tbs. plus 1 tsp. scallions, minced
1/4 lb. low fat cream cheese
2 eggs, beaten
3/4 tsp. Dijon mustard
4 English muffins, split and toasted
Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl. In a separate bowl, beat together the cream cheese, eggs, and mustard. Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes.

Apple-Turkey Spread

6 oz Cooked turkey, chopped
1/3 c  Onion, finely chopped
1/4 c  Carrot, grated
1/4 c  Apple, finely chopped
1/3 c  Plain yogurt
1 tb Lemon juice
1/4 ts Curry Powder

Mix together the turkey, onion, carrot, apple, yogurt, lemon juice and curry powder.
Chill mixture in fridge before serving with crackers or using as a sandwich filling.

Another Fine Turkey Spread .
8 oz Cooked turkey, chopped.
1/3 c  Red Onion, finely chopped.
1/2 c  Apple puree.
dollop of Mango chutney.
Mix well and keep container until used in fridge
use for serving on sandwiches and any other crackers
 
A Hodown Fine Turkey Spread .
8 oz Cooked turkey, chopped.
1/3 c  Red Onion, finely chopped.
1/2 c  Apple puree.
1/2 c.  of cranberry jelly
mix well and chill use in bread for sandwiches
or pita pockets  -depends on how much turkey you have.
