Orange Papaya Shrimp Salad
Serve with your favorite crusty bread.
Servings: 4
2 large navel oranges; 1 tblspn shredded orange peel;
1/3 c. fat-free mayonnaise dressing; 3 tblspns fresh orange juice ;
1 tblspn jalapeno pepper, seeded,& finely chopped;
2 tspns lime juice ;1/8 tspn chili powder ;
6 cups torn mixed baby salad greens or
 a mixture of lettuce and spinach;
1 papaya, peeled & sliced .
16 ozs shrimp in shell, cooked, peeled, & deveined .
For the dressing,combine fat-free mayonnaise, orange juice, the shredded orange peel, jalapeno pepper, lime juice, and chili powder. Set dressing aside.
Peel orange and remove white pith and membranes and slice orange segments.
Divide greens among four plates. Top with shrimp, orange slices, and papaya. Serve with dressing.
