Pecan Waldorf Salad.
1 green Apple .
1 red Apple.
Juice of 1/2 lemon.
Grapes.
1c. finely chopped celery
.Pecan Halves.
1/4 c. Mayo.
Method 1:
Core and slice apples.Dont peel.pour lemon juice over
apple slices to coat.combine with remaining ingredients.
chill & serve.

 
Method 2:
If preferred Pecan Waldorf Salad may be prepared by dicing
apples and pecans.Then combining all ingredients in salad bowl .

Waldorf Salad:
Update of the famous Waldorf salad with sliced Granny Smiths,
fresh fennel, pistachios and crumbled goat cheese.
INGREDIENTS
 3 Tbsp. fresh lemon juice
 1/4 cup extra-virgin olive oil
 Kosher salt and freshly ground pepper
 1 Granny Smith apple, unpeeled, cored and cut into 1/16-inch slices
 2 small heads fennel, trimmed and cut into 1/16-inch slices
 2 stalks celery, cleaned and cut crosswise into 1/16-inch slices
 1/4 cup finely chopped chives
 1/3 cup shelled pistachio nuts
 1 head butter lettuce, cleaned and torn into large pieces
 1/2 cup goat cheese, crumbled .

In a large bowl, whisk lemon juice into olive oil and
season with salt and pepper.
Add apples, fennel, celery, chives and pistachios.
Toss well; then add lettuce and goat cheese.
Season with salt and pepper.

Rice Waldorf Salad
INGREDIENTS:
2 cups red delicious apples, cored and diced, unpeeled
1/4 cup pineapple juice or apple juice
3 cups brown or white rice, cooked and cooled
1 cup chopped celery
1 cup chopped walnuts
1/2 cup raisins
1/4 cup shredded carrots
3/4 cup vanilla or plain yogurt, low-fat
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon cinnamon
PREPARATION:
Directions for Waldorf salad :
In mixing bowl, combine apples and juice.
Add rice, celery, walnuts, raisins and carrots;
stir to blend all ingredients.
In separate bowl, combine yogurt, mayonnaise, salt,
and cinnamon; stir to blend.
Stir mayonnaise mixture into apple mixture.
Cover and refrigerate Waldorf salad until ready to serve.

Waldorf Salad Recipe
Add raisins to this Waldorf Salad Recipe if you want
2 medium red apples, cored and diced (about 2 cups diced)
1 cup chopped celery
1/2 cup coarsely chopped walnuts
1/4 teaspoon salt
1/4 cup mayonnaise
Combine apples, celery, and walnuts; sprinkle with salt.
Add mayonnaise and toss to coat all ingredients.
Chill until ready to serve. Serve Waldorf Salad on lettuce
or mixed salad greens.
Waldorf Salad serves 4.

Spicy version of a popular Waldorf Salad,
 made
with apples and walnuts.
INGREDIENTS:
2 cups coarsely chopped apples, about 2 medium apples
1 1/4 cups chopped celery
1/2 cup coarsely chopped walnuts
1/3 cup mayonnaise
2 teaspoons sugar
dash allspice
1 teaspoon lemon juice
PREPARATION:
To make Waldorf salad, place chopped apple, celery and walnuts in a bowl. Combine mayonnaise, sugar, allspice
and lemon juice. Toss mayonnaise mixture with apple mixture.
Serve waldorf salad over salad greens if desired.
Waldorf salad serves 4 to 6

CLASSIC WALDORF SALAD

Ingredients:

1 cup apples chopped, (Granny smith or a Sweet tart apple or a combination of different tart apples)
1 tablespoon lemon juice
1 cup celery, chopped
1/4 cup mayonnaise
1/4 cup raisins (optional)
1/4 cup walnuts (optional)

Sprinkle apples with lemon juice after they are cut
Add all other ingredients.

Toss to coat all pieces with mayonnaise.

MODERN WALDORF SALADS
RECIPE 1
The traditional apple, walnut and chopped celery salad is updated
with a yogurt and low-fat mayonnaise citrus dressing, pine nuts and
Cajun seasoning.
1/4 cup low-fat mayonnaise
1/4 cup nonfat plain yogurt
2 tablespoons orange juice
2 teaspoons grated orange peel
1/2 teaspoon Cajun seasoning
1 head romaine lettuce
1 grapefruit
1 firm but ripe Bosc pear, peeled, cored, diced
1 tart green apple (such as Pippin), peeled, cored, diced
1 cup seedless grapes, halved
1/3 cup chopped dates
1/4 cup pine nuts, toasted
Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in
small bowl to blend. (Dressing can be prepared 1 day ahead.
Cover and refrigerate.)
Line large bowl with large outer leaves of lettuce. Chop enough
remaining leaves into bite-size pieces to measure 6 cups
(reserve remaining lettuce for another use).
Place chopped lettuce in another large bowl. Using small sharp knife,
cut off peel and white pith from grapefruit.
Cut between membranes to release grapefruit segments.
Cut segments in half. Place in bowl with chopped lettuce.
Add diced pear, diced apple, halved grapes and chopped dates.
Add dressing to salad and toss to coat.
Transfer salad to leaf-lined bowl. Sprinkle salad with pine nuts and serve.
Serves 6.

RECIPE 2
2/3 cup dried tart cherries or dried cranberries
1 cup boiling water
1/2 cup mayonnaise
3 tablespoons sour cream
2 tablespoons fresh lemon juice
1 teaspoon sugar
4 Granny Smith apples, cored, cut into 1/2-inch cubes
1 1/3 cups very thinly sliced celery
1 1/3 cups red seedless grapes, halved
1/4 cup pecans or walnuts (toasted or candied)
Romaine lettuce leaves
Sweet and Spicy Candied Pecans
Soak cherries in 1 cup boiling water until softened, about 10 minutes ,
then drain.
Whisk mayonnaise and next 3 ingredients in large bowl.
Add apples, celery, grapes and cherries; toss.
Season with salt and pepper.
Arrange lettuce on platter.
Spoon salad over the lettuce.
Top salad with the pecans or walnuts.
