Bread Salad
Makes 6 side-dish servings
Start to Finish: 20 minutes
Ingredients
1/4  cup olive oil
3  tablespoons red wine vinegar
3  tablespoons snipped fresh oregano
1/2  teaspoon sugar
1/4  teaspoon salt
1/4  teaspoon ground black pepper
1/4   pound whole wheat sourdough or other country-style bread, cut into 1-1/2-inch cubes
1/2  of a 10-ounce package torn Italian-style mixed salad greens (about 5 cups)
1  medium tomato, cut into thin wedges
1/4  cup halved yellow cherry tomatoes or yellow sweet pepper, cut into 1/2-inch squares
1/2  cup  Greek or other olives
1. In a screw-top jar combine oil, vinegar, oregano, sugar, salt, and pepper. Cover tightly and shake well. 
2. In a large salad bowl combine bread cubes, torn Italian-style mixed greens, tomato wedges, cherry tomatoes or sweet pepper, and olives. Add dressing; toss and serve. Makes 6 side-dish servings
