Poor Mans Goose(English)
Yield: 4 Servings
Ingredient
1    large cooking apple
2 ts sugar
1 pk sage and onion stuffing
1 lb potatoes
slices of liver
1    salt and pepper
1    dripping
Instructions
Set oven to 350/F or Mark 4. Take a deep dish and put a few knobs of
dripping in the base. Peel, core and slice the apple and place in a
layer on the dripping. Sprinkle with the sugar. Make up the sage and
onion stuffing as instructions on the packet and add a layer to the dish,
followed by slices of liver.
Finally add a layer of raw potatoes cut into slices
with a little seasoning. If the dish is deep enough to repeat
 the layers, finish with potato. Dot with drippin~ and bake for 1 hour.
The texture and flavour of this dish is said to be like that of roast
goose. No exact quantities can be given as it is a ‘poor man's dish',
made with whatever is available.
Cheese and sliced onion can be used
instead of liver.

Poor man’s goose[Welsh]
For the poorer folk there was  ‘Gwydd dyn tlawd�?(Poor man’s goose).
Pig’s heart, liver, kidneys and sweetbread.
3lbs potatoes.
Onion.
Sage.
Salt and pepper.
Par boil the potatoes in their skins, peel and slice.
Chop the onion finely.
Chop the sage finely (after having dried it in the oven.
Wash the meat thoroughly and dry in a cloth and cut into small pieces.
Grease a pie dish, and place a layer of potatoes on the bottom of it with
a little of the onion and sage. Then add a layer of the meat mixture.
Alternate the layers until the pie dish is full using the potatoes for
the final layer. Fill the pie dish up to the last inch with water and
placed oiled greaseproof paper on top of the layer of potatoes.
Bake in a medium oven for ¾ of an hour.

 POOR MAN'S GOOSE
Wash a pig's fry and dry it well in a cloth ;
cut the liver and heart into slices ; flour it,
and lay it in a baking dish; season it with pepper, salt,
and a teaspoonful of chopped sago leaves,
and one onion chopped fine; pour in a gill of water, cover it,
and bake three-quarters of an hcur in a moderate oven.

Poor Man's Cake
A spice cake with raisins.
Ingredients:
1 1/2 cups raisins
1 cup cold water
1/2 cup cold water
1/4 cup shortening
1 cup white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 1/2 teaspoons baking soda
2 tablespoons hot water
2 cups sifted all-purpose flour
Preparation:
In a heavy saucepan, bring raisins and 1 cup water to a boil.
Reduce heat to low and continue cooking 10 minutes longer.
Cream shortening and sugar. Stir in cooked raisins, 1/2 cup water,
cinnamon, nutmeg, allspice, salt, and baking soda dissolved in
hot water. Beat in flour.
Pour batter into greased and floured 9 x 13 x 2-inch pan.
Bake at 350 ° (175 degrees C) for 25 minutes.
