Teriyaki Potato Hot Cakes
Makes 12 hotcakes,      Serves 4.
Ingredients:
450g pkt Wattie's Homestyle Mashed Potatoes
2 Tbsp Wattie's Bit on the Side Teriyaki Sauce
3 eggs, (beaten)
1/4 cup self-raising flour
1/4 cup milk
1 tsp oil
200g flaked smoked fish, canned or fresh
About 2 Tbsp fresh coriander leaves for garnish
Extra Wattie's Bit on the Side Teriyaki Sauce
Method
Place Wattie's Homestyle Frozen Mashed Potatoes in a microwave-safe
bowl and cover. Cook on high for 6-8 minutes.
Remove from microwave and stir until fluffy; set aside to cool for a few minutes.
Thoroughly stir in the flour, before stirring in the Wattie's Bit on the Side Teriyaki Sauce,
beaten eggs and milk.
Cook quarter cupfuls of the mixture in a lightly greased non-stick frying pan for 6-7 minutes,
turning once, until golden brown.
Serve topped with smoked fish, a little more teriyaki sauce and garnish with a coriander leaf.
Tips: For a light meal serve with salad or make smaller hot cakes and top with
smoked salmon for a great entertaining idea.
Prep time: 5 minutes  .    Cook time: 25 minutes
