 Fried Corn  - cajun style
Description:  
Ingredients:  6 ears of corn (shucked)
1 small green bell pepper (diced)
1 small red bell pepper (diced)
1 white onion (diced)
2 TBS oil
1 TBS sugar
1 TBS milk
1/4 cup butter
1 small tomato (diced)
salt and pepper to taste
 
Directions:  in a hot skillet combine oil, corn, peppers, onion, sugar and milk. Stir fry over high heat until all ingredients are mixed well. Cover and let cook over medium heat (checking, stirring often) until corn is carmelized. Mix in butter and salt/pepper to taste. Add diced tomatoes to garnish finished dish.

Corn Stir Fry :
1can Corn kernels-440g tin [drained];
1 can Peas -440g tin[drained];
2 size 7 Eggs;
Oil;
Bacon Pcs;[enough for your needs ]
this is the easiest stir fry I have come across.-
Heat your pan with drop of oil to test for correct heat ;
Then add a wee bit more for the stir fry of the veges.
Add the can of corn then add peas , mix around till coated with oil and heat thru.
Take off heat and drain the veges in to bowl.
Then add the bacon pcs and cook lightly .
Drain and add these to veges.
Add the 2 eggs , breaking up and stirring as well to stop sticking.
Then add all your veges and bacon to the eggs  .
Warm through properly and serve .

Corn and Parsnip Fritters.
1/2 can creamed sweet corn [440 gms]
2 tbsps grated parsnip.
1 tbsps grated cheese.
1 cup plain flour .
1 tsp.Baking Powder.
1 tsp Cold water.
added Sour Cream. & Tomato Relish
Mix all together in one bowl , leave for 3 hrs.
then when flavors are absorbed fry in hot pan.
small tablespoons of mixture.
leave to keep warm on plate until all are done  .Serve.
