1/8 cup corn oil 1 lb small zucchini, sliced 1/8 cup sliced green onion 3 tomatoes, peeled and sliced (optional) dash pepper 1 clove of garlic, minced 1/2 green pepper, chopped 1/2 cup grated cheese (optional) 2 Tsp. minced parsley 1-1/2 cups Rice Crispy cereal (or store brand) (Crushed) Saute' zucchini and onion in oil, in an oven-proof skillet, until lightly browned. Place tomatoes over zucchini and sprinkle with pepper, garlic, and green pepper. Cover and bake at 350° for 20 minutes. Sprinkle with cheese and crushed cereal, and bake 20 minutes longer. Sprinkle with parsley just before serving. Yields 4 servings |
