PEAS & pasta
2 TBS Olive Oil
3 Shallots - chopped
2 garlic cloves - minced
salt & pepper
1 (1-lb) bag of frozen fresh peas
4 oz (1/8 thick slices) prosciutto -diced ,can also use bacon
1/4 cup chopped fresh Italian parsley
1 lb of spagehtti cooked & drained 
Heat oil in a havy large skillet over med-low heat. Add shallots, garlic, salt & pepper, saute until tender, about 1 minute. Add peas and saute until heated through, about 5 minutes. Stir in prosciutto and cook, 1-2 minutes. Add parsley, remove from heat -season to taste with salt & pepper. toss this with cooked spahetti, tossed it all and then added freshly grated parmesean. Wonderful!
