RECIPES : Savoury Shortbread

Savoury Shortbread   makes 8 dozen.
 
8 ozs mild cheese grated
8 ozs butter
3 1/4 cups flour
1/2 teaspoon mustard (optional
Beat cheese and butter to a cream and blend in the flour and mustard to make a stiff dough.   Knead well.   Shape dough into 2 rolls 2 inches in diameter.
Chill until firm.   Slice in  1/4 inch slices.
Bake at 400F 12 to 15 minutes.
For flavour variation add 1 cup finely chopped nuts  or top biscuits with a tart lemon water icing.
Both recipes freeze well.
