No-Bake Cheesecake


Ingredients

Garnish depends on the flavor of Jell-O you choose. If you use cherry
Jell-O, you can dollop cherry pie filling and whipped cream on top. Lime
flavor is good with Cool Whip and a lime slice or mint sprig. Orange
flavor is good with mandarin oranges and whipped topping. This recipe
can be frozen and taken out of the freezer one hour before serving.
1 (3-ounce) package Jell-O (any flavor)
1 cup sugar
1 cup water
1 (8-ounce) package cream cheese
1 can evaporated milk, chilled
2 graham cracker pie shells
garnish (see note)

Procedure

In saucepan, bring Jell-O, sugar, and water to a boil, then set aside to
cool. Drop cream cheese in Jell-O mixtureto soften. Whip canned
evaporated milk until it forms soft peaks. Using mixer, beat Jell-O
mixture and cream cheese until thoroughly blended, then fold in whipped
milk. Pour into pie shells and let chill for a couple of hours. Garnish
as desired.
