Probably the ham pinwheels and the stuffed celery I make.  These came from my mother and it's just something I always could count on at the holiday.  Mom used to bring them when she would come to my house for Thanksgiving.  I learned a long time ago to make the stuffed celery but never learned the pinwheels.  Then when her mind started to go she couldn't remember how to make them.  But thru memories and trial and error I have brought them back.  And it's not really something that can be measured you kind of have to taste as you go and keep tweaking.
