Tyson center cut pork chops
Oil enough to cover the bottom of the skillet
1 egg
mustard- 1/4 cup
flour about 1-2 cups
salt and pepper to taste
 
Mix the egg and mustard together.
Heat the oil in the skillet
Dip chops in mixture one at a time -- first in the flour, then the egg mix then the flour again. 
 
Place in skillet and sprinkle salt and pepper on top.  Brown on first side, turn, season again and allow to cook, turning as needed.
 
NOTE- pork must be thoroughly cooked, 165 degrees is the safest.  Never eat under cooked pork!
