INGREDIENTS: 4 cups frozen sweet corn 3 small mangoes, peeled, pitted and diced 1 1/2 lbs jicama, peeled and diced 1/4 cup chopped red onion 1/4 cup fresh chopped cilantro 1/4 cup fresh lime juice
Procedure: Cook corn and cool. Combine all ingredients in a medium bowl and toss to combine. Cover and refrigerate until cold. (Can be prepared 3 hours ahead. Keep refrigerated.) Serve cold Posted by: Darlene |
