Chicken Tostadas
- 6 tostada shells (6")
- 1 can (16 oz) refried beans
- 3 c. shredded lettuce
- 1 1/2 c. cut-up cooked chicken or turkey
- 1 c salsa
- 1 medium avocado, sliced
- Lemon juice
- 3/4 c shredded Monterey Jack or Cheddar cheese
- 2 medium tomatoes, sliced
- Sour cream, if desired
- Extra salsa, if desired
Directions:
Heat tostada shells as directed on package. Heat beans in saucepan over medium heat, stirring occasionally, until hot. Spread over tostada shells, sprinkle with lettuce.
Mix chicken and salsa in a saucepan; heat until hot. Sprinkle avocado with lemon juice.
Spread chicken mixture over tostada shells. Sprinkle with cheese. Top with tomatoes and avocado. Serve with sour cream and additional salsa.
