I have made this a few times as an easy breakfast dish, and a time or two as a supper dish. When serving for supper I usually served sliced tomatoes or salad along with Mexican corn with it.
I have used ham or sausage in this as well when I didn't have any chorizo on hand. I also have made it with the peppers, sundried tomatoes and mushrooms.
I have also used different cheesees, from pepper jack to cheddar.
On the peppers I have used red, yellow and green peppers and also some hot peppers. Or not used any at all.
Mexican seasoning is to taste
this a dish that you can add or take away from. As long as you use the eggs, milk, bread crumbs, Mexican seasonings, and especially the chirzo, you can omit the other ingredients and still have a Mexican Strata.
This dish I definetly will make again.
