Chicken Noodle Casserole
 
one package of noodles
3 chicken breasts cut into chunks
garlic - 1/2 teaspoon minced
1/2 medium onion diced
1  1/2 cups peppers ( I used combination of red, yellow and green)
2 teaspoons chicken seasoning
3-4 teaspoons ceorle seasoning
1/2 teaspoon red pepper flakes
2 cans cream of chicken soup
1 can evaporated milk
 
1. Cook noodles until el dente on texture.
2. Place chicken chunks into a skillet where you have melted a tablespoon butter and 2 tablespoons olive  oil. Add ceorle seasoning, chicken seasoning, & pepper flakes.  Cook, stirring occassionally. When chicken is about half way cooked  add peppers, onion, & garlic. Continue to  cook until chicken is partly browned and  veggies are  tender.
3. In a bowl place noodles and add the chicken soup, and  evaporated milk. stir. Add chicken mixture and stir until mixed.
4. Place in casserole dish and bake approximately 1/2 hour.

I fixed this lat night  for supper. I didn't use  enough seasoning for us as to me  it tasted a little bland.
 
I want to  fix it again only this time I want to use  rice instead of noodles.
 
The good thing about this is that it can also be adapted to other  vegetables like peas instead of peppers.
 
Also you could use some of those stale potato chips  crushed on the top or top with bread crumbs.
 
Made a nice side dish with the fried chicken & mixed  veegtables.
