Chocolate Caramel Turtles
2 1/4 cups packed brown sugar
1 cup butter
1 cup light corn syrup
14 ounces condensed milk
1 teaspoon vanilla extract
1 1/2 pounds pecans
12 ounces milk chocolate chips
2 tablespoons shortening
In large saucepan, combine brown sugar, butter & corn syrup. Cook over
medium heat until sugar is dissolved. Gradually add sweetened condensed
milk & mix well. Continue cooking until candy thermometer reads 248
degrees (firm ball stage). Remove from heat & stir in vanilla, mixing
until blended. Fold in pecans. Drop by tablespoons onto 4 buttered
cookie sheets (about 2 tablespoons per turtle) & chill until set. Once
set, melt chocolate chips & shortening together. Drizzle chocolate over
each cluster. Chill.
