Chocolate Mint Parfaits
2 cups cold milk
1/4 tsp peppermint extract
1 pkg. (4-serving size) chocolate instant pudding mix
6 drops green food coloring
1 cup Cool Whip, thawed
Pour milk & peppermint extract into medium-size bowl. Add dry pudding
mix. beat with a wire whisk for 2 minutes ,or until well blended, set
aside. Add food coloring to Cool Whip. Stir gently until well blended.
Layer pudding & Cool Whip alternately in 6 parfait glasses. Refrigerate
for 15 minutes before serving.
