Green Tomato Ketchup
24 medium green tomatoes (6 pounds), chopped 15 medium onions (3 pounds), chopped 1/2 cup coarse salt 3 cups white vinegar 2 cups sugar 6 tablespoons mixed pickling spices, wrapped in cheesecloth
In a large bowl, alternate layers of tomatoes and onions, sprikling each layer with salt. Let stand at least 8 hours or overnight. Rinse; drain well. Combine vegetables with vinegar, sugar, and spice bag.
In a large saucepan or stock pot, bring mixture to a boil and simmer, uncovered, for about30 to 45 minutes, stirring frquently until slightly thickened.
Pour into hot sterilized jars and seal.
Makes about 12 cups ketchup.
Excellent with tourtierre or cold meats year round. |
