Red Onion Relish
3 large tomatoes 1 large green pepper 1/2 of a large red onion Cider vinegar Salt and pepper
Peel and seed the tomatoes; dice - 1/8 inch size Seed green pepper and dice - 1/8 inch size Cut onion and dice - 1/8 inch size
Combine the tomoatoes, green pepper, and onion in bowl. Add vinegar just to cover and the salt and pepper to taste. Chill.
A few hours before serving, drain well. Serve chilled or at room temperature. |
