Grape Relish
1/4 cup chopped onion 3 tablespoons sugar 2 teaspoons minced fresh ginger root 1 clove garlic, minced 1 teaspoon chopped fresh jalapeno pepper 1 teaspoon whole allspice 1/2 teaspoon whole cloves 1/2 teaspoon salt 1/2 cup cider vinegar 2 cups halved seedless grapes 1/4 cup very thinly sliced onion 1/4 cup slivered almonds
Mix chopped onion, sugar, ginger, garlic, jalapeno pepper, allspice, cloves and salt in a non-corrosive saucepan. Add vinegar and mix well. Cover saucepan and bring mixture to a boil; reduce heat and simmer 10 minutes. Strain hot liquid over grapes, onion and almonds. Cover to allow grapes to absorb liquid while mixture cools. Stir occasionally until cool. Makes 2 1/4 cups. |
