Smothered Eggs 4 eggs 1 - 14 oz can asparagus 1 - 4 oz can mushrooms 1/2 cup Kraft Italian mix shredded cheese 1 TBS unsalted butter Lawry's Pinch of Herbs spice (this is what makes the dish so good) Spray small frying pan with olive oil Separate eggs and put whites in pan, discard yolks (or save them for something else) Turn heat on low, layer drained asparagus in a single layer in the egg whites til you can't put any more in (there will be some left over, I just eat 'em!). Spread drained mushrooms over top of egg whites. Sprinkle Pinch of Herbs spice mix to taste over the whole thing. Thinly shave unsalted butter and put on top. Cover pan, cook on low med for about 3 min or until egg whites are solid. Sprinkle shredded cheese on top. Cover pan again for about a minute until cheese is melted. Serves 2.
