ROASTED APPLESAUCE
2 large tart apples -- peeled, cored, quartered
1/2 cup apple juice
1/4 teaspoon ground cinnamon
1/4 cup sugar
1 teaspoon lemon juice
Place apple pieces on baking sheet. Roast in oven at 400 degrees F. for 30
minutes. Remove. Finely chop apples.
Place apples in small pan with apple juice, cinnamon, and sugar and cook
over medium heat while mashing with back of fork until coarse sauce forms,
10 to 15 minutes. Add lemon juice.
Yield: 2 servings.
