Tuna Mushroom Scallop
1 4 Oz. Can Mushrooms
Milk
4 Tbsp. Shortening
4 Tbsp. Flour
1 tsp. Salt
¼ tsp. Pepper
2 Tbsp. Grated Onion
1 8 Oz. Pkg. Potato Chips, crushed
1 Can Tuna, drained and flaked
Drain the mushrooms and reserve liquid. Add enough milk to the reserved liquid to make 2 cups. Melt the shortening in a saucepan. Add the flour, salt and pepper and blend well. Add the milk mixture slowly and cook, stirring constantly, until thickened. Add the onion and mix well. Place 1/3 of the potato chips in a 10 x 6 x 2 inch greased casserole and cover with the tuna. Add the mushrooms, then the sauce. Add remaining potato chips. Bake in a 350 degree oven for 35 to 45 minutes
